Celebration of Uttarakhand Cuisine

Chef Anil Singh

As part of The Cinnamon Collection’s 25th year celebrations, Cinnamon Bazaar Covent Garden presents a chef-led regional series spotlighting the talent within our kitchens. For ten weeks, guests can experience a Celebration of Uttarakhand Cuisine, a £35 six-dish sharing feast created entirely by Chef Anil Singh.

Uttarakhand cuisine is defined by provenance, seasonality and mountain simplicity. This menu transports diners from the heart of Covent Garden to the mountain foothills, showcasing flavours that are honest, balanced and deeply rooted in tradition. Expect dishes that reflect regional ingredients, gentle spice layering and techniques shaped by generations of home cooking.

Chef Anil’s earliest food memories are of school tiffins packed by his mother and shared among friends. It is the definition of food as connection and comfort. A third-generation hospitality professional, he trained across India and internationally before joining The Cinnamon Collection in 2021. Under the mentorship of Chef Vivek Singh and Chef Rakesh Nair, he now leads the kitchen at Cinnamon Bazaar Covent Garden. This menu reflects both his heritage and his growth.

Served in a sharing format, the feast captures the spirit of community that defines both Holi and Himalayan hospitality. It also forms part of a wider regional celebration across the Collection, including Himalayan cuisine in Richmond, Bengali cuisine in the City, Pahadi cooking in Battersea and Western Ghats cuisine at The Cinnamon Club.

If you’re looking for regional Indian cuisine in Covent Garden beyond the expected, this limited series offers something rare and deeply personal.
