Celebration of Himalayan Cuisine

As part of The Cinnamon Collection’s 25th year celebrations, we are proud to launch a chef-led regional series across our restaurants, beginning in Richmond with a deeply personal menu from Chef Sandeep Uniyal. For ten weeks, Cinnamon Bazaar Richmond will host a Celebration of Himalayan Cuisine, a £35 six-dish sharing feast that brings the flavours of Uttarakhand to south-west London.

Himalayan cuisine is rooted in seasonality, simplicity and respect for the land. Expect dishes that highlight slow cooking, gentle spice layering and ingredients that speak clearly rather than shout. This is mountain cooking at its most honest and soulful.

Chef Sandeep’s earliest memories are of growing up in Uttarakhand, watching his mother and grandmother cook with locally sourced ingredients and minimal intervention. That philosophy continues to guide him today: preserving regional traditions while refining them for modern diners. After 12 years in professional kitchens across India and Dubai, and now part of the Cinnamon Bazaar Richmond team, this menu represents both his heritage and his growth.

The six-dish sharing format encourages community at the table which is a hallmark of both Himalayan dining and the Bazaar experience itself. Each plate has been carefully constructed to maintain authenticity while ensuring accessibility for a London audience.

This Richmond menu forms part of a wider 25th anniversary regional celebration across the Collection, including Bengali cuisine at Cinnamon Kitchen City, Western Ghats cuisine at The Cinnamon Club, and further regional explorations at Battersea and Covent Garden.
